Okay, well actually no one was in the kitchen with me but that's just the way uh-huh uh-huh I like it! I love being alone in the kitchen, singing to my heart's content and baking up a storm. Or not baking...
Nope! No baking involved this time - just some edible raw cookie dough goodness 😋 And now I bet you're thinking about the salmonella concern in the eggs. Well, as many of you know, edible cookie dough is the big thing these days with eggless cookie dough hitting store shelves and many people have started making this delicious treat at home - substituting the eggs with water, oil, milk - even applesauce! But what most people don't realize is that flour is actually a huge safety issue. "Huh? What's so bad about flour?" I'll tell you.
The FDA explained that raw flour can contain bacteria and cause disease such as E. Coli. YUK! Who would want to get sick? But then again, it's cookie dough! Come on - there's gotta be a solution. And there is - a solution called heat-treated flour. Heat-treated flour is flour that undergoes a kill step - thermal treatment - which involves carefully heating the flour to kill any pathogens (bacteria or viruses). So, the dough you see being sold in stores and in dough restaurants (yes they have those, too :) ) is safe! YAY!
So, then, how are people making and eating it at home? Good question. Have you ever eaten raw cookie dough when you were baking? Probably. And nothing happened to you, right? Well, some people just don't see it as such a huge risk to take (I mean, come on, it's cookie dough!). I have to admit, I also steal a bite of dough when baking cookies, but now that I actually bake for my community from home and have heat-treated flour at my disposal, I no longer have the need to take a bite out of the unsafe version of cookie dough. If I ever want a bit of gooey goodness, I can just whip up a batch of edible cookie dough.

If you find a recipe online that you'd like to try, please be aware that it will call for raw flour and you will not be baking it.Some believe toasting your flour or putting it in the microwave is a good kill step, but I'm skeptical since we at home don't really know food safety standards nor the science behind food.
